Grassrivers is Rockstar's name for the wetland in the middle of the state, and the real place is the Everglades: a river of grass up to sixty miles wide that moves slowly south toward Florida Bay, along with the cypress swamp of Big Cypress next to it. The airboat sequences in the trailers are a clear match for the tour boats that run off the Tamiami Trail, and the alligator in a suburban swimming pool is a scene that plays out in the real suburbs on the Everglades edge most years. The smaller matches here, the roadside post office and the fishing villages at the end of the road, are graded lower and treated as travel ideas.
Most of this region is a day trip from Miami, and it is the cheapest region on the site to see. The Tamiami Trail (US-41) is the road to take, west out of the city past the airboat docks and Shark Valley toward Big Cypress and Everglades City; Alligator Alley (I-75) is the faster, emptier alternative to the north. Go in the dry season, December to April, when the water is low and the wildlife is concentrated along the canals. Rockstar hasn't shown a town in Grassrivers, but a swamp town in a GTA game looks like it draws on Everglades City, whose stone-crab fleet has a famous history with the wrong side of the law.
Roadside oddity → Ochopee Post Office
Nothing official points here, but Leonida's roadside oddities look like they draw on places like Ochopee, where a shed the size of a parking space has been a working post office since 1953.
